A special clear soup with a hint of fish, made from pork bones, plenty of vegetables, and kelp.
We use custom-made “extra-thick curly egg noodles” delivered daily from Sapporo. The 85-degree soup is quite hot, but has a robust flavor. By mixing in the garnished grated ginger, you can enjoy a refreshing soup.
Soaked in hot water for 75 minutes, then boiled for 5 minutes, marinated in soy sauce for 1 hour, and rested in the refrigerator for 2 days… You can enjoy a delicious marinated egg with a jelly-like yolk that cannot be tasted at other restaurants. We have been told that even those who are not fond of eggs can eat this one.
Miso is seared on the surface of a wok, then clear soup is added, and vegetables are further roasted with flames to add flavor to the miso soup.
I began my journey with my personal belief, “My path begins with a dream,” held close to my heart. Since then, companions who share and resonate with this vision have gathered at Samurai Noodle. After working in Tokyo once and feeling defeated, I returned to my hometown of Rumoi, Hokkaido. There, the power of Rumoi’s nature and the encouragement of my friends revitalized me, leading to the opening of “Mensho Sakiya” in Rumoi in 2004, followed by our expansion into Kotoni, Sapporo in 2007.
Deep inside, I felt a need for revenge against my past experience in Tokyo. Driven by the desire to challenge myself in Tokyo once more, I made the move in 2009. On April 22, 2010, my long-awaited directly managed shop opened in Dogenzaka, Shibuya. While feeling immense gratitude for the support and encouragement of my companions, I am moving forward toward my dream, step by step. I will continue to strive even harder in the future.
