Our company opened in 2004 in Rumoi, Hokkaido. With the support and encouragement of everyone, we opened our Sapporo shop in 2007, Shibuya shop in 2010, and expanded to Chiba and Tsukuba shops in 2013. Currently, we operate the authentic roasted miso ramen brand “Mensho Shinbu Sakiya.”
The “100-Year Vision” our company upholds is to “develop together with Global Asia, valuing the spirit of hospitality, social contribution, and learning.” “Global Asia” is a term I created, representing our endeavor to support Asia through our company’s operational know-how and to change the world from Asia.
Our company is based on the concept of “a shop where even a woman can feel comfortable visiting alone.” After joining, to learn our company culture and operations, you will first experience customer service and cooking at existing shops. Afterward, you will be entrusted with overall store management, including soup and noodle making, sales and shift schedule management, recruitment of part-time staff, and training of new employees.
I should mention upfront that our vision goes beyond the prosperity of individuals and companies; we are seriously looking toward the prosperity of Asia, including Japan. To achieve this, we seek those who can pour these thoughts into every single task—providing hospitality to each and every customer, creating every single bowl of ramen—and who have the attitude to set their own goals and achieve them.

Our sauce is a blend of Shinshu white miso, Hokkaido Beni-itten miso, and 12 other ingredients, resulting in a spicy miso base. The soup is a special clear broth (Chintan) featuring pork bone with plenty of vegetables and kelp, carrying a fragrant seafood aroma. For the noodles, we use custom-made “extra-thick wavy egg noodles” delivered daily from our local Hokkaido. Furthermore, the miso is roasted against the surface of a Chinese wok before adding the clear soup, using the flames to sear the vegetables and infuse the miso soup with a distinct, smoky aroma.
Using our successful case studies, we also provide consultation for other restaurant owners. For example, we use daily accumulated data to devise measures for problem-solving, such as productivity, marketing, and the importance of continuous learning.
For every bowl of ramen sold, we donate 2 yen to an organization that supports educational initiatives in Cambodia. These funds are also used to build Japanese language schools so that Cambodian children can receive a solid education. This year, we will open a long-awaited “Ramen School” in Cambodia.
